Rainbow Sugar Cookies

What could be happier than a brightly colored rainbow? A brightly colored rainbow covered in buttercream! These little gems are inspired by St. Patrick's Day, but they'd be fun for anything, really!

1. Make your favorite sugar cookie dough.
2. Divide the dough in to 6 equal portions.
3. Color each portion using gel paste colors (these will be much more vivid than your regular water based colors)
4. Knead the color in like you're kneading bread dough.
5. Wrap the dough tightly in plastic wrap and refrigerate for at least an hour, until it is well-chilled.
6. You'll need parchment paper and a rolling pin. I use these from Orson Gygi (support local businesses!). I use these for EVERYTHING and I don't know what I would do without them.
7. Roll your dough between two sheets of parchment into a rectangle about 1/8" thick.
8. Peel back top piece of parchment and set aside.
9. Repeat with each color, stacking it on the previous color after rolling it out.
10.-11. Trim sides to make a nice rectangle. Stop to admire the beautiful rainbow you just created. Then put the dough in the fridge for an hour or so (it needs to be really cold for the next part).
12. Slice about 1/4" thick and place on parchment lined cookie sheet.
13. Make a little notch in each piece. (otherwise, you'll have a big blob in the middle of your rainbow).
14. Bend into a rainbow shape and gently smooth together where you notched.
15. Bake at 350 degrees for 10-11 minutes.
16. Pipe on little rounds of buttercream using a plain round tip.

Watch as my cute daughter, Sofie, and I make these on Kutv Channel 2!

Sugar Cookie Fun

I personally prefer sugar cookies with a nice thick layer of butter cream frosting, but these turned out so cute that I will forgive them for their lack of butter cream.

Winter Wedding

Here are some pictures from a beautiful Winter wedding. We did a dessert bar and a cupcake tower wedding cake. Photos by the talented Heather Tycksen at Heather Tycksen Photography.

Cupcake tower wedding cake in reds and creams. Cream-filled chocolate cakes topped with chocolate ganache and personalized monogram cookies. Chocolate cakes topped with cream cheese frosting and tinted coconut. Vanilla cakes topped with home-made vanilla almond marshmallow cream and dipped in white chocolate. Vanilla cakes filled with fresh raspberry butter cream and topped with amaretto-whipped butter cream and fresh raspberries.

Cupcakes surrounded the tower on an elegantly dressed table.

Close-up of the personalized sugar cookies.

The dessert bar included: Milk chocolate dipped peanut butter blondies, meyer lemon bars, mini berry-topped cheesecakes, white-mint-dipped brownies, sour cream sugar cookies, white and milk chocolate dipped strawberries, and coconut macaroons.

I had so much fun. And thank goodness my mama came to the rescue and aided me in dipping and transporting these sweet confections. Aren't moms the best? Well mine is anyway.

September

I have been busy baking. So busy that my laundry has piled up, my kids have run wild, and my hubby has felt entirely neglected. I have enjoyed it immensely however! Here are a few photos...

Spooky Cookies, personalized for a Halloween Party. (I guess this was technically October, but you get the idea)

Autumn themed cupcakes. Chocolate zucchini cake topped with cinnamon butter cream. Y-U-M The kids and I snuck a few of the extras before I delivered these...

Lolli"pops" Homemade, buttery, ooey gooey caramel corn, on a stick, dipped in chocolate and rolled in pecans.

Personalized cupcakes for a Senior Living Center.

My own twist to the classic "Snowball" Cupcakes.

Sparkled Strawberry Sugar Cookies with an almond glaze. These went atop some Strawberry Shortcake Cupcakes for a 3 year old b-day party. Unfortunately, I neglected to capture a photo of the cakes...

Handmade chocolate butterflies atop fresh strawberry butter cream and chocolate cake.

It's been a busy month. And the madness continues, so I guess I will get back to baking!
