LO Bake and Sew Classes - January 2012 Session

During these crazy, uncertain times, it's important to get back to the basics. I think we need to teach our kids where food comes from, how to prepare it, and to really enjoy it. They should know that food doesn't come from a box! And they should learn to have fun in the kitchen. So...I am just tickled pink to announce that....

Due to popular demand, a six week session of classes, offering your children an opportunity to learn the basic, invaluable skills of baking and sewing is on the calendar. We should all know how to sew on a button or bake a cake from scratch! Children will also be exposed to a variety of materials and experiences - sparking their creativity, and building their confidence. And of course, they will have FUN, make lasting friendships & memories, and have beautiful (and tasty) creations to take home from each class!

Baking Classes

Session A
TUESDAYS: January 10 - February 14
4-5:30pm

Homemade Pizza - Scratch dough, fresh tomato sauce
Bar Cookies - Hello dollies, gourmet puffed rice treats

This was quite the shindig. The kiddos had a blast. And so did I. I will admit that the twinkly lights and paper stars are still hanging... I think they may stick around for quite a while...

My son INSISTED on this monster cake (6" round cake). And my daughter wanted a rainbow cake (this is a miniature version of my rainbow cake - 6" round)

They thoroughly enjoyed them. And the party was a blast - old fashioned ring toss, balloon pop, mustache photobooth, hula hoop contest, bubble blowing contest, and twister. Oh and of course, FOOD!

I love everything and anything pistachio. These babies are just perfect. Mini Pistachio French Macarons, filled with pistachio butter cream. They are so pretty and petite (about the size of a quarter), and so tasty. This was only my second attempt at french macarons (first attempt here), and my first attempt at making them this tiny, and with nuts. I am so pleased with the results...

Once again, picture taken with my phone! But that'll have to do ;)

Since the move, I haven't been keeping up on the blog. I have made a few things this last week. I forgot my camera both times, so you'll have to settle for pictures from my phone.

Vanilla cupcakes with fresh strawberry butter cream and white chocolate curls. Made for a lemonade stand at the local Community Arts Center to benefit Make-a-Wish foundation.

Vanilla cupcakes with whipped vanilla butter cream and mini rice krispy treats, made for a 6 year old birthday party. They were a hit.

In the process of getting my licensing here. Also looking in to shipping treats...

We've had a crazy couple of months. We moved (as most of you know) to Portland.

I am in LOVE with this place. The canapé of trees that line the street to my house. The moss covered rooftops. The ferns. The clean crisp air. And the bakeries. Yes the BAKERIES. This city is a food-lovers dream. I have been diligently "studying" all of the local bakeries. Ya know, getting inspired.

These were pumpkin spice cupcakes topped with cream cheese frosting and a personalized sugar cookie. The leaves were swirled with brown and red to make them look like fall leaves, and the names of each guest were stamped on the cookies to be used as place cards. I made some for our table as well and they were quite the conversation piece!

Thanksgiving Special...

I don't know about you, but for me, the table setting is almost as important as the food on Thanksgiving. I love to see the table set beautifully as I am putting the finishing touches on our quaint feast. Then the family gathers at the table as we give thanks and fill our bellies (to the rim). My mom and I always try to find a beautiful place card to mark each spot. Last year we cut them out on my Cricut. The year before that we hand wrote them and placed them in miniature pumpkins. This year, we are making personalized sugar cookies. I've decided to spread the cookie joy, and offer these to my clients.

The cookies will be leaf shaped, and stamped individually with each of your family member's names.

They will be $1.00 each and there is no minimum.

For an additional $.50, I will place your sugar cookie place cards atop spiced pumpkin cupcakes and a swirl of whipped cream cheese frosting.

These intricate little pieces of art take a lot of time (and love),

so I need your orders by Monday November 22nd.

They will be available for pick up on Thanksgiving morning anytime after 8:00 am

Your guests will feel the love as they see their personalized cookie atop their plates.

Bowling Party

My son is border line obsessed with bowling. Every night when he says his prayers, he says, "Thank you that I can go bowling with Will..." He means, "Bless me that I can go bowling with Will." That's his best friend. Anyway, if he forgets to say this in his prayers, he has to start over! So we thought it appropriate that we have a bowling themed birthday party for his 4th.

I couldn't find any bowling pin cookie cutters locally, so I had to make the one I used. I took a large heart shaped cutter and cut it and reshaped it with pliers. Now my hubby refers to me as the "handy, handy craftsman" (from Meet the Parents, so funny). So we had full size cupcakes with pins and balls. We tried to make the kitchen table look like a bowling lane. It looked really cool in real life, but didn't come out too well in the photos. You get the idea though ;)

And for their favors we gave them each a set of bowling cookies, a mini bowling set, some bowling balls (gum balls), and a little bowling pin flashlight.

I also learned a valuable lesson. This is the first boy party I have thrown. I had all sorts of activities planned (like I do for my daughter's parties), but after about 5 minutes with a house full of little boys I realized that they don't care about games and activities. They just want to run around and be crazy. So that's basically what we did. Run around. Be loud. Eat cake. Open presents. It was awesome.

Oreo Cake

At the last minute, we decided to have a birthday cake on my son's actual birthday... We were just going to save all of the festivities for the day of his party, but I felt bad for the little guy, so I made him this cake. So easy and fast! And it turned out pretty cute too ;)

Sour cream chocolate cake, filled with cookies and cream butter cream, frosted with vanilla butter cream, and covered with Oreo cookies. I would have covered the whole cake with the cookies, but ~~my hubby~~ someone ate too many of them before I could stop them...

Football

A sport I know nothing about. Nothing. It doesn't help that my husband is European, and thinks soccer is football and would rather watch hockey than any other sport. I'm OK with that though! All I know is that they run back and forth and the game gets stopped a lot. But I do like the idea of huddling up next to my hubby to keep warm whilst watching the game... Maybe one day we will venture out to a game and eat hot dogs and nachos and cheer like we know what's going on.

These are full sized cupcakes. Something I haven't mastered yet. I am much more fond of the minis. They are dainty and cute and froo froo. Probably not what a team of manly macho football players are looking for. And probably why their mom ordered these! Dark chocolate sour cream cake, fresh whipped vanilla butter cream, topped with vanilla glazed sugar cookies.

I made dozens and dozens and dozens of cookies this weekend for a cookie bar at a baby shower. I managed to sneak a few of the chocolate cake cookies so I could surprise my kids with these...

Perfectly whipped pink peppermint butter cream, neatly sandwiched between two chocolate cake cookies. Yummy. My babies were happy. And messy. But it was worth it! I'm thinking of adding these to my menu. The possibilities are endless - Chocolate Mint, Chocolate Orange, Chocolate Cream Cheese, Chocolate Vanilla, Peanut Butter Chocolate, Peanut Butter Strawberry, Chocolate Chip Peanut Butter, Snickerdoodle Cream Cheese, Pumpkin Cream Cheese... Seriously. I can think of like ten more combinations I would like to try! mmmm.

My Mom's 60th Birthday Bash.

My mom turns 60 tomorrow. So we threw her a party on Saturday. She requested cream puffs, Sugar cookies, and chocolate cupcakes....

Chocolate cupcakes with homemade fleur de sel (salted) caramel filling, topped with dark chocolate butter cream. Yum. And handmade toppers with a picture of her when she was 3. So cute, wasn't she?

Plums.

We've been enjoying juicy purple plums for the last week or so. Tonight I decided to make something out of them. I was in a hurry, so nothing super fabuleux...But I ended up with some home made brownies, a plum cinnamon compote, and almond whipped cream. It was the perfect combination of flavors - the sweet tart plums, the spice of the cinnamon, and the subtle almond flavoring complimented the rich chocolate brownies really well. I think the 19 year old boys that we fed them to probably didn't appreciate it, but I did ;) Already looking forward to the left-overs tomorrow night. If they make until then.

And it needs to be noted that I don't do fondant. I think it's yuck. So you just have to learn to appreciate the non-smooth look of the frosted butter cream. I promise what it lacks in fondant-esque qualities, it makes up for in flavor! :)

I made these last week for a Mary Kay event. I wasn't feeling that great, and I neglected to take any photos, luckily my very talented client took these great photos! Thank you L & L!!!

I always love the butterflies, but the bees turned out so cute! This party obviously had a pink and brown theme, but I think the little bees would look so cute atop bright yellow butter cream too!

Oh, and PS, as usual, these are mini cupcakes, so those little bees and butterflies are about 1.5".

I stopped at the local coffee shop and got myself a cup of amazing herbal tea (blood orange, so good), and a warm ham and cheese croissant (mmm...). Now I think I will make some of these:

Here are some snapshots from a recent wedding. The bride chose to do a cookie bar for her guests alongside the buffet. It was a total hit. I watched some guests come back 4 times. I even saw one person put 13 (yes. THIRTEEN) desserts on one tiny plate (because the bag wouldn't hold enough :). She also chose to do mini cupcakes in place of a wedding cake. They looked amazing and 400 cupcakes were gone in a matter of minutes. Mmmm. Sweet wedded bliss!

She had 8 different kinds of cookies. Aside from the flavors pictured, she also had puffed rice treats, sugar cookies with fresh whipped vanilla buttercream, snickerdoodles, and classic chocolate chip. And her cupcakes were all chocolate cake, with chocolate ganache filled with pistachio cream rolled in crushed pistachios, vanilla buttercream topped with a soft sour cream sugar cookie in a peppermint glaze, cream cheese frosting rolled in vanilla tinted coconut, and a simple almond glazed. The colors looked AMAZING and everything turned out supremely "sweet".

French Macarons

I've been wanting to try these for quite some time. These are french macarons. And almond based cookie that starts with a meringue base. The cookies are light and airy with a hint of almond flavor and they are sandwiched together with an almond flavored butter cream. I will be trying more varieties this week - Pistachio, Vanilla, Strawberry, and Chocolate. If all goes well you can see these french sweets on my table at Oh Sweet Sadie...

Making the lime curd on St. Patrick's Day got me onto somewhat of a citrus curd kick. I noticed the bowl of sweet manadarins in my kitchen just beckoning for some love, so I decided to try making orange curd. Oh my. It was soooo good. For those of you who maybe don't know what curd is... it's something like a custard, made with fresh citrus juice, sugar, eggs, and butter. My friend Somer, who is like a craft goddess, gave me the inspiration to fold freshly whipped heavy cream into the orange curd. It tasted like a creamsicle. Like a big, sweet, creamy bowl full of creamsicle.

Then I got to thinking that the creamy goodness needed some sort of vessel, so I made some mini tart shells in my new mini silicone tart pan (which, sadly, I wouldn't recommend. I think the old fashioned metal pans are much easier to work with and produce a better product, so please forgive the tart shells' imperfections!). I adapted a recipe for Pâte Sablée (something like a shotbread crust) that I found here. I baked the crust completely, cooled it, filled it with the creamy orange curd and then topped it with more fresh whipped cream. They were...scrumptious. Probably one of my top 3 favorite desserts I have ever made (also in the top 3 is the Pear and Almond Frangipane Tart that I made a few days earlier, and neglected to photograph. Blasted camera - I always forget to do that!). And if the crust seems too daunting, we also tried layering the orange curd and the whipped cream in cups like parfaits. It was really good that way. And it would be nice with orange curd, lemon curd, lime curd... The possibilities are endless!

And I have to apologize, not the best photo, but I was in a hurry. To eat one :)

St. Patty's Day Goodness

I neglected to take pictures of everything, but here is a picture of a couple of the things I made for two different St. Patrick's Day events (none of which I was able to attend, because my kiddos were home sick!).

Soft sour cream sugar cookies with fresh whipped vanilla butter cream, and chocolate little cakes topped with cookies-n-cream butter cream and personalized vanilla glazed sugar cookies.

I also made coconut macaroon tartes filled with fresh lime curd and topped with freshly whipped cream, and puffed rice treats tinted green and topped with drizzles of white chocolate tinted green. Both were yummy. And cute. But I forgot to take a picture before I delivered them. The lime tartes, I must admit, are a new favorite. The combination of the sweet macaroon crust with the tart lime center was to.die.for.

So sad that Valentine's Day is over. Not that my hubby is a romantic, but I do really enjoy the day, and so do my children. This year my 3 year old son even made us cards. I love it.

Tea Party Time

Spring time is approaching (at least that's what I keep telling myself), and it always makes me think of flowers and sunshine and tea parties.

Last Spring my daughter had a tea party. We passed out invites, bought mis-matched tea cups at the second hand store, set the table, made lots of little goodies, and drank "tea" (pink lemonade). She still talks about it. I think she may have enjoyed it even more than her birthday party!

I make a lot of fun treats for tea parties, like cupcakes topped with mini sugar cookies that say "Sugar", "Spice", or "Nice" on them. Or little pink butter cookies. Or puffed rice treats dipped in pink chocolate. The possibilities are endless...

And I will now be carrying tea party prints and invites from the amazingly talented Sarah Jane of Sarah Jane Studios.

I had so much fun. And thank goodness my mama came to the rescue and aided me in dipping and transporting these sweet confections. Aren't moms the best? Well mine is anyway.

Comfort

There is something almost therapeutic about baking for me. I don't really even need to think about it anymore. It's the perfect escape for me. I tune out the rest of the world (and by the rest of the world, I mean my ~~3 kids~~ 2 kids and my husband:) and I create. And there is always a real sense of satisfaction when I am done. BUT, that is only the case, because I have baked literally thousands of cupcakes and cookies. Now it's time for me to start thinking again while I bake...

I'm going outside my comfort zone and making 3 cakes for someone.

And who knows, if it works out, I may be adding cakes permanently to my repertoire.

Peppermint Hi-Hats

Apparently these are a classic, on the East Coast. I decided it was time for them to take a trip west.

These are my version of the hi-hat, which is a chocolate cupcake (in this case, a mini cupcake) topped with homemade marshmallow, which I flavored with peppermint, and then dipped in chocolate. Mmmmm. Heavenly.

This is what they look like on the inside. Or I guess I should say this is what they looked like, because they were gone about 3 minutes after I took this photo.

And on a side note, here is a picture of some Thomas the Train cupcakes I did for a birthday. Needless to say, my son was not very happy when he realized that these were not for him.

Just wanted to let you all know that I will now be offering “Midweek Treats”. I always have people asking me if they can order just a few of something, but normally I have a minimum of 2 dozen. These midweek treats will be small boxes of 4 – 8 treats and they will be offered every Wednesday. No minimum on the amount of boxes you order. I think it’s the perfect way to brighten up the middle of the week!

New Menu Addition.

I have had several requests for mini cheesecakes, so this holiday weekend I decided to give them a try. It took me a couple tries to get them right - the first time I made them the crust wasn't moist enough and the cheese cake wasn't thick enough, but in the end we figured it out and they turned out délicieux!

I topped them with fresh berries and an apricot glaze. The picture isn't the best, as I took it whilst running out the door, late for a 4th of July BBQ, but you get the idea! They will be priced at $36 for 2 dozen, with a 2 dozen minimum.

And on a side note...I think I have completely spoiled my children for life. There were perfect rice krispie treats, amazing chocolate chip bar cookies, and yummy sugar cookies also present at this BBQ. But no. My kids needed the fancy shmancy cheesecakes. They would settle for nothing less. At one point I looked over while I was chatting with some friends and Thomas (my 2 year old) was double fisting it with berries and cheesecake remnants all over his face. Not good. Not good at all. :)

Father's Day Boxes and Now Accepting Credit Cards...

I've finally decided to enter the modern age! Drum roll please...... Très Sucré is now accepting Credit Cards. I have gotten a lot of requests from customers, so there you have it. Voilà! And now on to the fun stuff.

I had so much fun making these little boxes. Especially since I was making all of hubby's favorites. He was hovering over my shoulder the entire time, drooling. He loved all of the treats and I hope all of your dads did too! Thank you!

Pink Flamingos and I'm Going Coconuts.

A friend of mine called and asked me to make her some Pink Flamingo themed cupcakes. I thought it sounded easy enough. I figured I would find some cute mini flamingo cookie cutter and make some little sugar cookies to go on top. After about 5 hours of searching on the Internet and calling various stores, I realized that mini flamingo cookie cutters do not exist. I found mini hot dog cutters, and mini lighthouse cutters, and basically any and everything else mini - but NO flamingos. Then I had a stroke of inspiration and decided to make them out of chocolate. They turned out so cute (in my opinion:). The beaks are made out of licorice, and the bodies out of pink chocolate. The cupcakes were dark chocolate with cream filling. The pink and green cakes were carrot cake with cream cheese frosting and vanilla with fresh strawberry frosting. Mmm mmm good! And I do need to note that until this week carrot cupcakes were my nemesis. The last time I tried to make them, which was well over a year ago, they sank into a soggy mess. But alas, I got my mom's recipe and they turned out really good. Nemesis - Conquered! Merci, mom!

This same friend also asked for something chocolaty and gooey. So I made her some chocolate dipped coconut macaroons.

Sufficeth to say, I am not the most computer savvy woman on the block. We purchased a new camera about 4 months ago, and I have just today figured out how to download pictures from it. So here are some photos from a couple of recent events. Still waiting on some pictures from the Domestic Goddess event I recently did (those will be professional photos:). In honor of my hubby I have decided to offer a father's day treat box filled with his favorite desserts. If you would like to order one, please let me know ASAP so I can plan accordingly. The boxes will be available for pick-up on Saturday June 20th. They will contain:

2 Chocolate Dipped Coconut Macaroons
2 Moravian Kolache with Cream Cheese Filling
2 Chocolate Cupcakes with Whipped Cream Filling and Chocolate Ganache Glaze, and they will say "Dad" on them.

Kaycee Stroh Wedding

I am finally able to share a couple of pictures from Kaycee's wedding in January! She chose to do a Cookie Bar for her favor. The guests were invited to fill a glassine bag with a selection of homemade cookies and then they sealed the bag with a sticker that was printed with Kaycee and Ben's monogram. This was so much fun for the guests, and was the perfect end to the night as they waited for the valet to bring their cars...

And as a side note, the cookies that Ben and Kaycee chose were: Sugar cookies with buttercream frosting, peanut butter brownies, chocolate cake cookies, chocolate chip cookies, snickerdoodles, mexican wedding cakes, puffed rice treats with a chocolate drizzle, and oatmeal with white chocolate and cranberries. She had cranberries with her arrangements, so we added cranberries to one of the cookies and we also had cranberries as fillers in the jars. It turned out great and it was so much fun!

A little banana paradise...

I had some left-over bananas and wanted to make something other than the standard banana bread. I came up with these.

I will admit. They were yummy. So yummy that immediately after tasting one and giving one to each one of my children, I delivered every remaining cake to my neighbors. Not because I am generous, mind you, but because I have NO WILL POWER. None at all.

Anyone out there reading this know my mom? If you do, you know she is fabulous! Most of my fondest memories from my childhood involve cooking with my mom. Warm cozy meals at dinnertime, sugar cookies at Christmas, and cupcakes in an icecream cone. I was thinking about these Cupcake Cones the other day and I thought about how fun it would be to bake those with my daughter. We decided on Mint Chocolate Chip (since we both adore that flavor icecream). First we wrapped the cone bases in foil and filled them with chocolate batter.

Then we baked them...

Then came the best part. The mint buttercream frosting. I am not generally a frosting fan, but I added a little extra cream to this and it litterally tasted like mint-flavored soft-serve icecream. mmm...

Strawberry Dipped Marshmallow Pops. We wrapped them up like lollipops and tied on a valentine that she made all by herself. So fun! And I promise not to post any more pictures of dipped marshmallows. This week anyway. Vive l'amour!

In case you haven't noticed already, I have a new obsession. Dipped marshmallows. I don't even like marshmallows. Yet... I. Am. Obsessed. Here are some more little cupcakes. And I do have to admit, though I don't like marshmallows, I have eaten one (or two, or three, or four) of these chocolate dipped. Because unfortunately, for me, chocolate pretty much trumps everything else. I would probably eat cardboard, if it was dipped in chocolate...

Valentine Cupcake

So, I got inspired by my favorite cupcake blog, and decided on a different cupcake for the Sweets for Your Sweetie boxes. These are neapolitan little cupcakes - a layer of chocolate cake, a layer of vanilla cake, topped with fresh strawberry frosting and a milk chocolate dipped mini marshmallow. Your sweetie will love these (mine did anyway:)

Within the next couple of days I will be posting some photos of my Very Sweet Valentine's Special. They will be little gift boxes filled with assorted Valentine's themed sweets. They will be called "Sweets for Your Sweetie" and they will be priced at $7.50 a box for a box of 8 treats. I will be making them available on Friday February 13th and Saturday February 14th. The sweets will look something like these cupcakes that I made for Sofie, but the boxes will include chocolate little cupcakes with fresh strawberry frosting and a choc. dipped marshmallow, sugar cookies with vanilla buttercream, cream puffs, and chocolate dipped strawberries. I will post photos ASAP. And get your orders to me as soon as possible (and I promise, this really will make your sweetie smile:)

My First Wedding

I was given an amazing opportunity for my first wedding. I did the thank you favors for High School Musical's Kaycee Stroh. It was amazing, truly fabuleux! The wedding was at La Caille - the first time I have ever been there, though I have always wanted to go there (hint, hint, hubby). There were over 500 guests. I thought for sure we would run out of cookies! The guests were able to fill a bag of homemade sweets while they waited for the valet to get their cars, and some people were loading up (that's the point, right?)! But, miraculously, we ended up with about 150 extras (out of about 1600 cookies). It was perfect. Kaycee is so down to earth and just so much fun. She made a beautiful bride, and hopefully she had a chance to eat the cookies that we packed for her:) I was able to meet a lot of really nice people, and I am sure alot of good will come from this experience. We weren't allowed to take any photographs, but the photographer will give me copies of his as soon as he can. Hopefully (fingers crossed) they will be pictured in People! I will post a link as soon as I can. In the meantime I just want to say THANK YOU, MERCI, DEKUJI, DANKE, and so on and so forth, to my amazing mom, who became affectionately known as "the cookie mom". I just hope that I can pay forward even a fraction of what she has done for me to my own daughter!
